I would suggest you look at the help files for -table-, -collect-. and -collect export-. That said, there is a trade off between flexibility and accessibility. The collect set of commands are more flexible and less accessible than estout. At the other extreme of estout, the -putdocx- command is even more flexible and less accessible than -collect-.
